Update build tooling

Tree shaking was not working properly because of the way the build process worked where TSC was running and then the code was bundled.

Build tooling was upgraded to esbuild for faster builds and migrated from jest to vitest to avoid issues with esm

Upgrade chevrotain to latest version, which is esm only (hence the move away from jest)
