chore: use rhdh-ai as catalog-info.yaml owner where appropriate (#2717)

with 'rhdh-ai' now synced to DevIT DevCorp, we can use it as the
owner for the catalog-info.yaml files for ai-integrations, mcp-integrations,
and lightspeed
