chore: update dependencies and configuration

- Added pytest-httpx, mypy, and pytest-cov to the test dependencies in pyproject.toml. - Configured pytest and coverage settings in pyproject.toml. - Removed setup.cfg as the project now uses pyproject.toml for configuration.
