Summary of the changes / Why this is an improvement

The CrateDB version in the CI matrix had no effect on pytest, CI was running only on nightly. Now main CI runs on CrateDB latest. One slot runs on 5.10.16, one slot runs on nightly as an early warning. It uses continue-on-error, so a nightly regression doesn't block PRs.

• docker-compose has removed, it runs on shared container
• Documentations has updated
• Added version gate for UUID column tests for CrateDB 5.10.16
